Why are Global knives so sharp?

It is hard enough to retain an effective cutting edge over time but soft enough to allow sharpening when required.

Global knives are also ground steeply on both sides of the blade, to a more acute angle than most western kitchen knives.

Caring for Global knives

 

To ensure your Global kitchen knives stay sharp and fit-for-purpose, it’s important to look after them properly.

  • DO NOT

○   Cut on tiled, glass or granite surfaces

○   Attempt to cut through frozen produce or bone

○   Cut with an ‘up and down’ chopping/hacking motion

○   Soak or use harsh cleaning products, particularly containing bleach

○   Put in the dishwasher

○   Store in a cutlery drawer

  • DO

○   Sharpen using a ceramic or whetstone

○   Clean using mild washing up liquid and hot water

○   Store using a knife block, magnetic wall rack or knife roll/case
