From Chroma’s Takumi (“artisan”) collection, Haiku Korouchi knives combine the highest quality of handmade craftsmanship with tradition, elegance and top-quality materials.

Right out of the box the Haiku Kurouchi knives are breathtakingly sharp and, with proper maintenance, their cutting capacity will reach a level practically unattainable for standard kitchen knives. This is thanks to the sandwich construction of the blade. With a core of extremely hard, blue Aoko steel, protected by softer outer layers, an optimal hardness of 61° HRC is achieved at the cutting edge.

Apart from its long tradition of knife making, the Tosa region of southern Japan is well known for its rugged, wild landscape which is reflected in the Kurouchi blades and which lends the knives an unmistakeable quality of untamed nature. After being forged, the Haiku Kurouchi knives are worked so that their blades remain dull black and only the ultra-sharp cutting edge stands out with its metallic gleam. Indeed, the Japanese term Kurouchi roughly translates as “black forged”.

A final striking feature of the Haiku Kurouchi knives is the stainless steel bolster with its stainless steel mekugi pin which helps to secure the blade in the polished black magnolia handle.
